A castanha é o fruto do cajueiro, uma árvore nativa da América tropical, que também é responsável pela procução de caju, um pseudo-fruto que é caule da castanha. A castanha de cjo tem tres partes: casca, óleo e a amêndoa.

A amêndoa da castanha é a principal parte da fruto. Antes mesmo do descobrimento do Brasil já era uma fonte de alimento para os índios e hoje é apreciadíssima em todo o mundo por seu excelente sabor e valor nutritivo-proteinas e carboidratos podendo se consumida crua ou torrada com ou sem sal.

A casca da castanha é uma fonte alternativa de combustivel. O óleo, conhecimdo comercialmente por LCC, tem alta viscosidade e é utilizado na indústria química na produção de tintas, vernizes, plásticos, resinas e inseticidas.
